Red Quinoa

Just discovered quinoa. This is the red velvet cake of my alternative grain tasting so far!

Here’s my favorite way to cook it:

  • 1 cup quinoa
  • 2 1/2-3 cup vegetable broth (to add a richer flavor)
  • Spices: anything you want! I love it with sweet basil, paprika (salt/pepper)

about 2-3 servings (depending on if you eat it as a side dish). Takes 20-30 min to cook on med-high. Ready when soft and fluffy.

Quinoa is considered a superfood.[14] Protein content is very high (14% by mass), yet not as high as most beans and legumes.
