My friend Laura and I were having a terrible pancake craving the other night. We were so excited to try these out, and they actually have the thickness of wheat-flour pancakes! Imagine a toasted, soft peanut butter and jelly sandwich. Simple recipe & really good.

We ended up using almond flour and raspberry preserves instead, but the same idea applies.
Eating pancakes hot off the stove…just like eating cookies fresh from the oven…Mmmm
