Sweet Potato Waffles

The sun pours into Seattle like maple syrup on a thirsty waffle.

In other words, our summer dreams of shorts, barefoot volleyball, or front-lawn BBQ crawl out of the shadows. I love Seattle when the sun lights it up. Green, everywhere. The perfect weekend to visit UW (and the rest of the city thinks so too)!

So on Saturday, after attempting to wear shorts for ten minutes, and realizing it was still 40 degrees out, I settled for waffles.

Waffles for dinner, actually.

It turned out to be a pretty fantastic alternative to shorts.Image

Here’s the recipe:

2 cups ground oats

1/2 cup sweet potato, cooked & soft

4 tbsp coconut oil, melted

1 cup applesauce

1/4 cup maple syrup or honey

3 eggs

A couple pinches of salt

(Not necessary but may include 2 tsp baking powder, and 2 tsp cinnamon for flavor)
