This is my favorite summer snack. Reminds me of frozen yogurt, but it’s dairy-free and so flavorful!
- Sliced strawberries, raspberries, and blueberries
- Coconut cream
- Almonds slices to sprinkle
- Honey to drizzle on top.

It is wonderful seeing days like this hit social media.
The KEY to great patty flavor is fresh herbs. Tonight I chopped rosemary and basil.
My dad’s side is Italian, and he’s carried on the garden tradition since our nono and nona immigrated to the states. We actually just caught up with my favorite Italians a couple weeks ago! My great auntie on the left, Carmie, turns 100 tomorrow! She is one of the kindest people I know. If I ever live to be a centurion, I hope to be half as beautiful as she is.
So on to the burgers!

If you’re on the Paleo, GAPS, or Simple Carbohydrate Diet, you need to be sure to accompany vegetables or other safe carbs or starches with your meat!
I’m able to eat beans occasionally, so I’ve chosen a great side of beans with a dash of cheese and avocado.
I’m so excited to be beginning grad school in just a couple weeks! It certainly adds to the food prep stress though. I’m searching for new strategies to make snacks and meals easier.
Here is one success so far!
Proportions? Up to you! I chose to do 12 cup liners, so I used 10 whipped eggs, 3 oz ground beef, and 5 strips of bacon. I had enough to make a pie-size quiche as well. So you certainly could cut my number of ingredients in half for just 12 breakfast cups!
Also, I’d highly recommend plastic baking cups. They are reusable and easy to clean. They’ve saved me time and don’t cling to the quiche.
