Some Sweet Potato Plotting

“How do you live??” 

A question I often hear when people learn of my diet.

Humor. You gotta have it. When food is like a bad boyfriend and you just keep breaking up and getting back together, humor eases the pain of the ride.

“Yeah, my diet sucks right now, but you ever try acorn squash after living off of broth and apple juice? Man is it like tasting honey in the dessert. I used to need to cover squash in spices, but now it’s pure gold.”

Besides humoring my still-mysterious-sickness, I’m counting all those things I do have. One being my fantastic, new job as a preschool teacher (boogers and time outs aside, their silly wonder makes every day worth showing up). Two, being all those people I love and am privileged to be loved by.

On to sharing some ideas with you, I’ve been up to some sweet potato plotting today. I get to try some tomorrow and am sooo excited! Have you ever been this excited about a potato? Maybe not, but here’s why you should try one:

According to health.com, “one baked, medium-sized sweet potato contains 438% of your daily value of vitamin A (a white potato contains 1%), 37% of your vitamin C, and some calcium, potassium, and iron too. All this at just 105 calories!”

(Besides the fact that you can make french fries, casseroles, stir fry, pancakes, soups, and much more with them!)
